L O C A T I O N
The appellation area is situated on the left bank
of the Rhone River, between Orange and Avignon.
S O I L S
The main feature is the large rounded stones or
pebbles known locally as "galets" which retain some of the intense
daytime heat of the Provencal sun and then slowly disperse it to the
vines during the night. This layer of stones is two metres deep and
beneath it there is a layer of clay, through which the vines' roots
penetrate in search of water. In short, an exceptional soil.
C L I M A T E
Mediterranean with particularly hot summers. The
Mistral wind blows away any humidity, ensuring climactic conditions very
favourable to the cultivation of vines.
H A R V E S T
This brandy is issued from grapes of several
parcels of Châteauneufdu-Pape which are hand-picked.
W I N E M A K I N G & A G E I N G
Resulting from the distillation of the grape skins
after winemaking, this alcohol has a very specific flavour. The
distillation is done in a still with double wall where the solid matters
are agitated permanently to avoid caramelization. In addition, this
distillation is made under vacuum in order to save the fruity expression
of the alcohol.
D R I N K I N G
Its long ageing in new barrels during the first 8
years, then 2 to 4 years more in old barrels gives to the Vieux marc its
nice amber colour in which you can find some green reflections. On the
nose, its expression is on rich notes, burned, spiced, sap and mint. At
the tasting, the roundness is the dominant sensation. Then, there is an
explosion of toasted flavours. The finish is long and harmonious. |
